Chicken, avocado & crunchy salad

The hob can have the evening off.

Serves 2 · 10–15 minutes

What you need

  • 260 g ready-to-eat roast chicken breast
  • 150 g avocado flesh
  • 200 g cucumber
  • 200 g tomatoes
  • 50 g baby spinach
  • 10 ml olive oil
  • Black pepper to taste

Make dinner

  1. Wash the cucumber and tomatoes. Chop into bite-sized pieces. Slice the avocado, discarding the skin and stone.
  2. Divide washed spinach between two bowls. Add the cucumber, tomatoes and avocado.
  3. Top each bowl with half the ready-to-eat chicken and olive oil. Add black pepper to taste and serve immediately.

No. This is an independent Well-ish Woman ebook by Vânia Alves. It is not created, approved or supplied by Forever Living. It does not replace the C9 programme guide, and these recipes are not presented as approved C9 meal substitutions.

Is this a weight-loss plan or a complete daily diet?

No. It is a collection of low-carbohydrate dinner ideas, not a prescribed daily diet, a keto plan or a promise of weight loss. Choose portions and additions for your appetite and dietary needs. If you are following C9, use its own instructions for programme meals.

How long do the recipes take?

Estimated total times range from 10–15 minutes for no-cook assembly to 40–45 minutes for stuffed peppers. Hands-on time is listed separately in the ebook, so you can distinguish preparation from oven time.

Are calories included for every recipe?

Yes. Every recipe includes estimated calories and carbohydrate per serving, based on half the written recipe. Values include the listed oil, cheese and sauces. Extras and substitutions are excluded; brands and portions can change the totals.

Have the recipes been tested?
